Okay so we all love a good burger and hate the fatty feeling after?! Well no more I have a yummy recipe for you. Low cals and fat! So good you could have two and not be hurting any scales.
Perfect Summer Burgers
Makes 6
1 slightly beaten egg white
2 tablespoon water (I used crushed ice - helps the moisture)
1/4 cup bread crumbs (use day old whole wheat bread crumbs and toast in oven at 350 and until starting to turn brown)
1/4 cup finely chopped onion (use food storage onions and add water - makes no mess and no cutting!)
1/4 cup shredded carrot
1/4 cup chopped red pepper (Veggies add good nutrients, juiciness and is SNEAKY)
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon (total) your favorite seasonings - I used garlic powder, crushed red pepper, parsley flakes, and kickin chicken.
2 Tablespoons of grated Parmesan
1 pound lean ground beef (I used extra lean turkey, yum-o!)
6 whole grain buns (make sure the first or second ingredient says whole grain or wheat)
lettuce, tomato slices, onion, pickles - whatever that floats your boat. Just don't add extra cheese (that is fat people! The Parmesan adds a nice burst of flavor with less fat than cheddar) Low cal dressings are ketchup, mustard and bbq sauce. Adding mayo will boost the fat high! If you need it try something else like low cal ranch.
Directions:
Combine and make into patties. Grill on OILED rack (will stick so coat well) for 7 minutes then turn and grill for 8 to 11 more minutes until no pink. Serve on buns or lettuce.
Nutrition facts:
232 calories, 18 g protein, 19 carbs, 9 g fat (3 g saturated), 3 g fiber - that is for the beef. Turkey would be even LOWER!
**I halved this recipe and it worked - but I wish I didn't because I wanted leftovers!
Enjoy!

Izzie update
I wanted to thank everyone for their prayer on behalf of Izzie. She is almost totally healed now. She is acting like herself and starting to eat and look like our sweet little girl. She is still on her medication and sleeping a lot, but it is doing her some good. It was so scary not knowing what was wrong and not being able to help her.

Izzie's rash
Our poor girl has been so sick this last week. It started Thursday evening with her feeling so hot. I gave her Tylenol and put her to bed. She had a terrible night that night and the whole weekend she has had a high fever of about 101.7. Then Saturday at 4:30am she woke up screaming. I feed her and gave her Tylenol and put her back to bed-she continued to scream bloody murder. I brought her in our bed then noticed she was covered in a rash all over her legs. Well it continued to get worse and then it started spreading to other parts of her body, tummy, back, arms, face. She was so miserable that we decided to take her to the ER. We spend the most of the day, testing her and still found nothing. Sunday, she still continued to feel awful and now she is blue and red all over, itching and crying all day. Poor baby - and she hasn't eaten in 2 days! I cry with her because I can't give her any relief. Monday we are taking her back in to the doctor and hoping for the best. Pray for our little one.

Banana Coconut Pineapple Bread
I had some left over pineapple puree (frozen pineapple chucks and pureed in my Vita-Mix) and needed to use it - and I thought of this! It was yummy with a chewy, crunchy crust.
Banana Coconut Pineapple Bread
Ingredients:
1/2 cup pineapple puree
3/4 cup brown sugar
2 eggs
1/2 teaspoon almond extract
2 medium overripe bananas, mashed (1 cup)
½ cup coconut
1/ 2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoons baking powder
½ teaspoon baking soda
1/2 cup chopped pecans
Directions:
1. Preheat oven to 350. Grease a 9" x 5" loaf pan. Or mini loaf pans.
2. In a large mixing bowl, beat the eggs until fluffy. Add pineapple puree and brown sugar until creamed, mashed bananas, and extract until creamy.
3. In a separate bowl, combine flour, salt, baking powder, soda. Gradually add this dry mixture into creamed mixture and mix well.
4. Stir in chopped pecans.
5. Pour into greased loaf pan. Bake for 50-60 minutes. Mini pans 45 minutes.
6. Makes 1 loaf.

Potty training
I love having Matthew potty trained. It wasn't fun teaching him, but it has finally engraved in his brain (with a lot of bribes, yelling and screaming -from both parties, some cursing -that was from me and threatening). We have dry pull-ups at night and during nap time. I am now even brave enough to let him sleep in his underwear - okay soon. Going pee was easier for Matthew he had it down the 3rd week for sure but #2 was another story. He was Mr. Regular - very regular, like 4 times a day! Yes, tons of diapers and changing -yuck! So he went down to nothing to pooping in his underwear or WAITING for a pull-up to be put on. I was getting so mad and I tried talking and letting him understand that pooping in toilet was okay to do. Nothing was working, I tried candy, cars-nope nothing was working. So finally he pooped in his underwear and I told him that he has to wear it and with a diaper on the outside. He was so mad at this. "Yucky, stinky, I don't wanna wear it" he screamed. So I took it off and told him to go outside and I hosed him off (yes with the hose and yes I waited until the water was cold!) He didn't like that so much either. So this happened only once more and that was last week. My kid has decided to not get hosed off and wear the stinky underwear with poop - and poop in the POTTY! It is amazing how fast things click when they decide something. It has taken me 4 weeks! This is week 5 with no accidents (so far). Who said they can potty train their kid in 3 days - they are amazing or (probably) lying!

Eggs and a sandwichmaker who knew..
Okay this is an odd post, but I now cook all my fried eggs this way. Who knew a sandwichmaker and an egg belonged together, two peas in a pod, like peanut butter and jelly, Bert and Ernie -okay now I am just rambling.
One day I was blog hopping and I ran into this article and tried it and now I am hooked. It makes the perfect fried eggs and they are a triangle - more perfect for the little ones who are learning shapes! I plug in my sandwich maker (which by the way I never used very much and now it makes it appearance at least once or twice a week) 1 minute wait. I spray my triangle shapes (depending how many eggs I am cooking from 1 to 4) with Pam. I crack open my eggs and S&P them then close and lock my sandwichmaker. 1 to 1.5 minutes I turn over my sandwichmaker let it sit then 1 minute later I remove my eggs. I like mine a little runny in the yolk. But you can cook it longer and have a hard middle. They are perfect and so little clean-up. Try it if you have a sandwichmaker and let me know how it goes!
